Bushmills gets its water from the Bush River, after which the distillery takes its name, and the distillation has always been in the country. In 1850 the Queen imposed a tax on barley, changing the distillation of whiskey which would have drastically veered on whiskey of wheat, often used to create blends of various kinds, a whiskey softer and rounder, while Bushmills decided to continue distilling only whiskey of malt, defining itself as the only Irish distillery to follow this path.
A fire threatened to close the distillery in 1885, just as Prohibition gave the Irish market a big blow. Black Bush belongs to the original line, mostly aged in barrels that previously contained Sherry.
TASTE: Fruity notes, dehydrated bitter orange peel, then acacia honey and small berries. Ripe fruit, touches of bitter cocoa, dark chocolate, black pepper and cherries in alcohol, morello cherry and black cherry.
AGING: American oak barrels ex Bourbon and European barrels ex Sherry Oloroso.
