Belgium, the world's home to beer production, had never had distilleries brewing whisky single malt. The story changed when at the end of the twentieth century the Belgian Etienne Bouillon, lover of whisky, decided to leave for Scotland, in particular to the island of Islay to attend the academy of whisky at the Bruichladdich distillery; where he learned all there was to know on the subject from the masters of the whisky Scottish. In the early 2000s he returned home and founded the Belgian Owl distillery, the first distillery to produce a whisky 100% Belgian Single Malt, combining techniques learned in Scotland with the best natural ingredients Belgium has to offer.

After the opening of Etienne Bouillon's distillery, several Belgian realities have turned towards the production of Belgium Whisky Single Malts.
