Sibona Distillery
Sibona is one of the distilleries that still works by hand today and has the old distiller's license, this certificate means that the distillery is prestigious and historically important. Located in Piedmont in the center of an area heavily cultivated with the best known grapes in the Piedmont area, such as the Nebbiolo vine and the Barbera, Dolcetto, Moscato, Chardonnay, Arneis and Brachetto vines.
The processing of the pomace takes place immediately after pressing during the production of the wine so that the pomace arrives fresh at the distillery. This allows to extract the scents and aromas of the harvest. The careful selection of the pomace, the typical accuracy during distillation and the continuous improvement of the distillation systems make these grappas unique. Refinement is also important. After a long period of aging mainly in tonneaux and barriques, the grappas acquire pleasantly soft, aromatic and complex notes.
A prerogative that distinguishes this distillery from the others is that of aging some grappas in different types of barrels.
In particular, they use wooden barrels of different sizes and types, including the special Porto, Madeira, Sherry and Tennessee barrels Whiskey, Rum and Sauternes from which reserve grappas are born.
