In the United States in 1919, before prohibition, there were more than 1000 craft distilleries in the state of New York, until all existing realities were closed due to the abolition of the marketing of alcohol. In 2001, the Erenzo brothers decided to acquire the Tuthilltown Gristmill to open a farm-shelter for professional climbers, neighbors objected. With their skills and together with Master Distiller Brian Lee, they converted the two barns into the first microdistillery of whiskey in New York State since Prohibition. It took six months of experimentation to start producing big whiskey in small batches. The production is based on the use of locally sourced materials with a low environmental impact, copper pot stills and maturation in small American oak barrels.
