The Lambay Whiskey was born in 2018 from a collaboration between two entrepreneurs, Alexander Baring and Cyril Camus who made possible the creation of unique and extraordinary products, born in an exclusive place, the island of Lambay. The island is located off the east coast of Ireland, just three miles off the coast of Dublin; Lambay Island is a haven for wildlife and for the many birds whose cries can be heard all over the island; the Baring family has owned the island for generations and are working to preserve all of this and ensure that the island's original culture and traditions are passed down from generation to generation. The Camus family is, however, famous for being the fifth largest producer of Cognac in the world; the Camus maison is located in La Norelle, France.
Lambay, being a private and uninhabited island, cannot at least for the moment host a distillery; the owners thus buy the mature liquids in bulk from distilleries in West Cork, Northern Ireland and the east coast, mature and blend them on the island; it is precisely this process that will make this Irish Whiskey rare and incomparable.
Lambay Island has a unique ecosystem and microclimate, being an isolated place it is also away from pollutants and the freshness of the sea air in combination with the flora and nature of the island, give the whiskey a unique aromatic profile, different for each barrel. In the Sea Cask Room the ex Cognac barrels of the Camus maison are placed, where i whiskey are left to rest taking advantage of the pure air rich in sea salt, which will help to give the whiskey Lambay, saline notes. The influence of Cognac is very evident, the ex Cognac French oak barrels release very intense aromas to the final product, with notes of fruit and vanilla. THE whiskey of Lambay undergo a triple distillation and are also aged in ex Bourbon American oak barrels.
One last pleasant curiosity: on Lambay labels Whiskey the Atlantic Puffin is depicted, the puffin, adventurous bird, symbol of the island.
