Poli Secretary of State is the first whisky marketed by the Poli Distilleria, the Italian pride of distillation active in the world of grappa since 1898 and which until now had never thought of being able to offer a cereal distillate as well. On 15 October 2013 Pietro Parolin was elected Secretary of State of the Holy See and having been born in Schiavon, the town of origin of the Poli family, he chose to study something particular to celebrate this event: the Poli family decided to try to distill some whisky, starting from the knowledge accumulated over decades of work with distillation, introducing a new ingredient, barley malt, to which a slight peat is added. For the distillation it was decided to use the Crysopea, a recently designed two-boiler vacuum bain-marie system installed in 2009, capable of handling the new material. After several experiments we begin to see something excellent, reaching the point of selecting some Amarone casks for refinement, refinement that lasts for five years.

Poli Secretary of State is a pioneer of whisky in Italy, although the history of whisky in Italy it is well known and has a long tradition. However, it has rarely been thought of to do a whisky completely Italian, that is, sourcing the excellent raw material and giving it shape in Italy, with a still similar - if not the same - to those used in Scotland or elsewhere. Italian reticence has had a long history but today Poli, as a cornerstone of distillation in Italy, has seen fit to throw his heart over the obstacle and start trying to give a face to the whisky Italian, proudly 100% Made in Italy.Poli Secretary of State is not a single experiment but it is the first of the line that Poli Distillerie is studying in these moments, in search of an Italian taste and the caliber of our distillation tradition which is second to none. In fact, distillation has always had an important role in Italy and every region can boast a local distillate. The peating of this Poli Secretary of State is gentle and serves to give an international touch to this malt, preferring then to use some large barrels that previously contained Amarone Venetian red wine to give a final twist to the refinement.
There is a lot of curiosity and as far as we are concerned we are also proud to present this bottle, certain that the caliber of Poli and the selection of the best raw materials are just two of the many ingredients chosen by the Company to realize this dream and begin to make progress in the world of whisky, an increasingly global world crowded with many nations who are working day after day to offer the best whisky ever. Attention: we Italians are also in the race and we have no intention of choosing compromises.
