The distillery was founded in 2010 by Adam Spiegel with the help of Cognac expert and Californian brandy producer, Hubert Germain Robin, in the Californian county of Sonoma, famous for its wine production. The use of pot stills of Spanish and Portuguese production, and the use of double distillation, determine a lower yield than the more modern stills. The distillates are aged in 15, 30 and 53 gallon barrels and then undergo a double maturation: first in virgin charred American oak barrels and then in barrels that have already been used. The alcohol reduction of whiskey occurs with the progressive addition of water so as not to create a single shock.
