Cognac is a wine distillate produced with the Ugni Blanc vine in the homonymous town of France in the Cahrente region.

The distillate is matured in three different phases: the first of 8/12 months takes place in virgin oak barrels, where the distillate absorbs from the wood all the substances that will enhance the product. Subsequently the distillate is placed in barrels, where it is left for a period of time ranges from 2 to 5 years. In the third and eventual step, the distillate is collected and stored in glass containers to avoid decay from excessive maturation.

The AOC (Appelation d'Origin Controlee) specification, created in 1909 to protect the product from "imitations" made in other areas of France and in other countries, provides for 6 official areas (Cru), which are: Grande Champagne, Borderies, Petite Champagne, Fins Bois, Bons Bois, Bois à Terroir or Bois Scelire.


Cognac is a distillate precious and refined, derived from the wine spirit produced in the Cognac region of France. Its preparation begins with the purchase of white wines coming mainly from grapes of vines such as Ugni blanc, colombard e Mad White. These wines are then subjected to a double distillation in traditional copper stills called "Charentais".
The resulting liqueur is aged in oak barrels for at least two years, although the best cognacs can age for decades, developing complexity and depth of flavor over time.

The history of cognac dates back to the 17th century, when it was discovered by chance by a Dutch wine merchant. While transporting wine in wooden barrels on ships, merchants realized that the wine, once it reached its destination, had transformed into a stronger and more aromatic liquor due to the travel conditions. This process of transforming wine gave rise to what soon became known as cognac.

The name itself"cognac", as mentioned, comes from the production region, Cognac, in the Charente-Maritime area of ​​France. Here, the temperate climate and calcareous soil favor the cultivation of Ugni Blanc grapes, used mainly for the production of cognac. The distillation of wine to create cognac became afine art, with craftsmen perfecting the techniques over the centuries. The process involves double distillation of white wine, followed by a long aging process in oak barrels. During this aging period, cognac develops its characteristic complex aroma and rich flavor.

Cognac varieties

Among the most common varieties of cognac are the VS (Very special), the VSOP (Very Superior Old Pale) to the XO (Extra Old), each representing different levels of aging and complexity.

Cognac classified as VS (Very Special) is generally aged for at least two years and offers a fresh and fruity taste, with floral and citrus notes.

Il VSOP (Very Superior Old Pale), on the other hand, is aged for a longer period, usually four to six years, and has greater aromatic complexity, with nuances of vanilla, spices and dried fruit.

The XO (Extra Old) represents the most valuable category of cognac and is aged for at least ten years, if not more. This long aging period gives the cognac an exceptional richness and depth of flavour, with complex nuances of wood, cooked fruit, chocolate and spice.

Over the past fifty years, global sales have increased steadily, averaging 2,5% per year, tripling volumes from 83 million bottles in 1970 to 192 millions of 2020.

Surprisingly, 98% of bottles produced in France are exported, underlining the importance of the international market for cognac. Despite a 9% increase in sales value, there was a slight 4% decline in volume, suggesting growing interest in variants premium need high quality.
