Starwards Whisky
Starward is one of the few distilleries in Australia, a continent certainly not known for distillation. Everything is due to Davide Vitale, passionate about whisky of Italian origins, who chose the big island – to be precise, an area near Melbourne – to build his own distillery and start offering his product to the world.
Davide decided to procure all the raw materials not far from the distillery, so everything comes from the Melbourne area: even the barrels used for aging are locally sourced, i.e. from the wineries that use them for the refinement of their wines. The climate plays a fundamental role in the aging of the whisky: higher temperatures increase annual evaporation – the so-called angel's share – forcing the producer to make shorter refinements.
