The Irish Waterford distillery is one of the very few nonconformist companies that chooses for its distillates only barley grown in a totally organic, biodynamic way, taking advantage of what nature offers it, respecting the maturation times and the microclimate of the area. Waterford The Organic Gaia Edition 2.1 is the second edition of the whiskey Irish from Waterford therefore produced with non-imported organic barley, cultivated with old processing methods to continue to respect Mother Earth.
TASTE: Spicy, citrus. sweet spices and cherry. Toasted notes and hints of peanuts and cocoa.
AGING: First-fill American oak barrels, virgin American oak and French oak barrels and ex natural sweet wine barrels.
