Filey Bay Moscatel Cask Finish is a rare example of whisky British, distilled in the new distillery called Spirit of Yorkshire, which as can be assumed from the name is located in the Yorkshire area, certainly not one of the usual destinations to give life to a distillation process of whisky. Nonetheless, since May 2016 Spirit of Yorkshire has been active and continues to distill, managing in a few years to perfect the details and give life to a limited series of labels often available in small batches, to give enthusiasts from all over the world a taste of what it can be done in this part of England.
The distillation takes place through two Forsyth stills and a column still, to try to give greater softness to the spirit. To follow this belief, different types of barrels are used, as in this case: after an initial period of maturation in ex bourbon barrels, Filey Bay Moscatel Cask Finish remains for a final period in oak barrels that previously contained Moscatel wine.
TASTE: Soft and elegant, dried fruit and candied fruit, light spices and a discreet ripe fruit
AGING: American ex Bourbon oak barrels and ex Moscatel barrels.
