Highland Park distilled in 2007 and released in a limited edition in 2020 for Roma Whisky Festival. Produced by one of the best-known distilleries in the history of whisky Scottish, or Highland Park, distillery of the Orkney Islands based in Kirkwall, this whisky Single Cask is matured for 12 years in an American oak barrel and aged for the last eight months in an Octave ex Sherry oak barrel; only 74 bottles were released.

Duncan Taylor's goal is to select whisky unique to be put on the market often as a single cask, i.e. without joining several casks as happens in most cases. The products of the "The Octave" range are aged for a period in smaller barrels, called Octave Casks, with a capacity of about 50 liters of distillate.

TASTE: Notes of salted caramel, heather honey and pepper; in the finish the sweetness of Sherry, which is combined with cocoa powder and fruit.

AGING: American oak barrels and Octave barrels of European oak ex Sherry.
