Kavalan Selection Peaty Cask is the quintessential excellence of whisky from Taiwan: it's not a joke, but a solid certainty for a few years, since the Kavalan distillery started taking things seriously, perfecting every detail of the production to excess and studying the Scottish tradition in depth. The first step was to adapt the whisky and its aging in wood at high tropical temperatures, much higher than the respective Scottish ones with the result that the annual evaporation is drastically 7/8 times higher. The whisky Taiwanese cannot therefore remain in wood for a long time in order not to lose too much alcohol and fall below the 40 degrees threshold, but can take advantage of this accelerated aging to give a different product from the Scottish (or Canadian or Japanese) one precisely because of this prerogative.
Furthermore, this bottle is a selection from a single cask that it previously held whisky peated, without reduction with water or cold filtering, to keep the superfine characteristics of this unaltered whisky of Taiwan.
