Rest & Be Thankful Benrinnes 2007 Bourbon Cask is another wonderful interpretation of the philosophy of recent independent bottler Rest & Be Thankful Whisky Company, a small practically artisan shop that takes care of finding precious barrels of whisky in the warehouses of lesser-known distilleries and to make them protagonists of memorable bottlings. In this case the choice fell on a single cask of Benrinnes, one of the rare pearls of Speyside, a distillery that is not very well known because it is often used to add character to blends, but which always manages to give important satisfactions when dealing with various independent bottlers . The barrel is number 304259 and was filled on April 30, 2007 until it was bottled on May 20, 2019, after just over 12 years of waiting. In the case of Speyside and Benrinnes, the refinement of around 10 years gives beautiful nuances, giving the opportunity to better understand the character of one of the most beautiful distilleries in Scotland.
