Grappas

Grappa is a brandy that comes from the distillation process of pomace, i.e. from skins of grapes produced and vinified exclusively in Italy. The birth of grappa production has very ancient origins and was certainly very different from what we understand today.

In the early years of the twentieth century, important scholars perfected the distillation plants, later, after World War II, in Italy there was a period of development and the modern distillation industry was born.

Starting from 1980, artisanal distilleries begin to produce quality grappa and enthusiasts become more expert and more demanding. Today Grappa is the Italian distillate par excellence, it is softer and more elegant.

Grappa varies according to the grape variety or grape varieties from which the pomace was obtained, from the stills used: discontinuous cycle (used in the production of artisanal grappa) and continuous cycle (used in industrial production). 

Grappa can be young, therefore transparent in appearance, or refined or aged in wood.


The Preparation of Grappa

Grappa is a traditional Italian distillate obtained from pomace, i.e. from the solid parts of the grapes remaining after pressing during wine production. These residues include grape skins, seeds and stems, which are collected and processed to obtain the distillate. These pomace must be fresh and moist, retaining a certain quantity of sugar necessary for fermentation and subsequent distillation. During fermentation, the sugar content present in the pomace is transformed into alcohol, making it suitable for the distillation process.

Distillation takes place in copper or stainless steel stills, which can be continuous or discontinuous. In the process, the fermented pomace is heated in a boiler until it reaches a temperature of approximately 80°C. At this temperature, alcohol vapors begin to form and rise through a water-cooled copper coil, where they condense and return to a liquid state. This condensed liquid represents the grappa distillate.

During distillation, it is possible to separate the different components of the distillate based on their evaporation at different temperatures. This process allows you to eliminate the toxic substances present in the "head" and "tail" of the distillate, focusing instead on the "Heart", which contains ethyl alcohol and valuable aromatic substances. The distillate thus obtained can be further rectified to ensure maximum quality.


This liquid is then aged in wooden barrels for a variable length of time, which can give the grappa a wide range of flavor nuances, from fruity sweetness to spicy complexity.

The History of Grappa

The origins of grappa date back to centuries ago, when Italian farmers, with age-old wisdom, began to practice the distillation of pomace, giving life to a liqueur with stimulating and aromatic properties. Initially, grappa was considered one modest and rustic drink, associated mainly with the humblest classes of society. However, with the passage of time, grappa has gradually gained a position of prestige, becoming a symbol of Italian tradition and craftsmanship.

Over the centuries, the production and consumption of grappa have evolved significantly. There birth of artisanal distilleries and the improvement of distillation techniques have contributed to improving the quality of the final product, making grappa increasingly appreciated both nationally and internationally. Today, grappa is considered an Italian excellence in the panorama of spirits, a symbol of mastery and dedication in the processing of raw materials.

The history of grappa is intrinsically linked to Italian culture and tradition, representing a key element in celebrations and convivial moments. Its versatility makes it suitable for multiple occasions, from consumption after meals to aid digestion, to use in cocktails and mixed drinks. Varieties of Grappa

Grappa varieties offer a range of unique sensory experiences, each characterized by distinctive aromatic and gustatory nuances. Among the most common varieties stand out the Moscato grappa, Barbera grappa and Nebbiolo grappa, each produced with selected pomace from specific vines. Moscato grappa, for example, stands out for its floral aromas and fruity taste, while Barbera grappa can have fruity and slightly spicy notes. Nebbiolo grappa, on the other hand, is renowned for its aromatic complexity and structure, with rich notes of ripe fruit and dried flowers.

In addition to the basic varieties, they also exist grappa aged in wood, which subjected to an aging process acquire rich nuances of vanilla, spices and exotic woods. During this rest period, the grappa interacts with the aging wood, enriching it aromatic profile e gustatory with sophisticated and complex notes. These aged grappas are often considered real delicacies, appreciated by connoisseurs and liqueur connoisseurs.

Additionally, some distilleries offer flavored grappas, enriched with herbs, fruit or spices, which give the spirit an additional dimension of complexity and depth of flavour. These flavored schnapps can vary greatly in taste, from the fresh, lively notes of herbs to the sweet, juicy nuances of fruit, offering a wide range of possibilities for schnapps lovers.


Accompaniments and Cocktails with Grappa

Grappa is often consumed alone as a digestive, served at room temperature or slightly chilled to enhance its aromas. However, it can also be used as a key ingredient in cocktails and mixed drinks. Among the most popular grappa-based cocktails are the Grappa Sour, Grappa Smash and Grappa Tonic, each characterized by a unique combination of ingredients that enhance the taste and aroma of the grappa. Grappa also pairs well with mature cheeses, dark chocolate and fruit-based desserts, creating balanced and harmonious combinations.


The Best Grappas

Among the best grappas on the market, names such as Nonino, Jacopo Poli, Segnana and Bonollo, distilleries renowned for their quality and attention to detail in the production process. These grappas are characterized by complex aromas, smooth flavor and long, persistent finish, making them highly appreciated by consumers and connoisseurs around the world.

An interesting anecdote concerns the distillery Jacopo Poli and its connection to the art world. The Poli family, owners of the distillery, has always had a deep passion for art and culture. Over the years, they have collaborated with numerous artists and designers to create special editions of grappa bottles, transforming them into authentic works of art.

One of the most famous projects was created in collaboration with the contemporary artist Mimmo Paladino. In 1989, Paladino created a limited series of grappa bottles for Jacopo Poli, each of which was decorated with a unique work of art signed by the artist. These bottles soon became highly sought after collectors' items by art collectors and grappa lovers alike.


Production, Export and Consumption
In 2022, grappa production recorded a notable increase of 12% compared to the previous year, with a total of 83.000 hectares produced. Grape spirits showed a recovery, with a production of 610 hectares which represents an increase of 53% compared to the previous year. However, wine spirits saw a sharp decrease in volumes produced in 2022, with only 1.800 hectares (-71% compared to the previous year).


Despite the challenges related to domestic production, grappa exports grew by 8% in 2022, reaching a value of 60 million euros compared to 51,5 million in 2021. This 16% increase in value indicates growing demand and appreciation for grappa on international markets, confirming its status as a quality product appreciated throughout the world.
According to an analysis conducted in November 2023, a very dynamic reality emerges for grappa consumption in Italy. It is estimated that 30% of the population between 18 and 65 years old is involved in the consumption of this distillate. Among those who prefer to enjoy it outside the home, 46% opt for consumption in restaurants (30%) or in clubs (16%), while 88% appreciate sipping it in company, with a predilection for friends (49%).
