Caol Ila 12 Year Old Quercus Alba 2008 Wilson & Morgan is a special selection made by Wilson & Morgan, an Italian company active since 1992 in finding, selecting and sometimes combining casks of whisky of Scottish distilleries to give their own interpretation of this extraordinary material.
In this case, as normally occurs in the production of whisky of higher availability, Wilson & Morgan has decided to combine several casks of the distillate of the same company – i.e. Caol Ila, on the island of Islay – but limiting the number of casks involved to only five, greatly increasing the technical difficulties in obtain a high quality product. In order not to make things easier, Wilson & Morgan also included two Quercus Alba barrels in the mix, i.e. American white oak, by definition virgin barrels, i.e. without having been used to refine other distillates or spirits. American oak barrels are often very intense in terms of the final result, forcing special attention to obtain a whisky of good quality: perfectly successful experiment.
TASTE: Intense and peaty, leather and dried fruit, citrus and marine notes.
AGING: American ex Bourbon oak barrels and American virgin oak barrels.
