The most powerful Single Malt on the island of Islay could only use a barrel of Pedro Ximènez to complete its double maturation. Single Malt Scotch Whisky distilled in 2005 on Islay from Lagavulin, to be bottled in 2020 under the Diageo "The Distillers Edition" range; this 16-year-old Lagavulin undergoes a second maturation in casks that have contained Pedro Ximenez.
Distillers Editions are Single Malts that undergo a particular maturation process. Each of them, after having spent the normal period of aging in American oak barrels, undergoes a second (or "double") aging in a barrel that previously contained a fortified wine. The duration of this second maturation depends on the moment in which the aroma of the distillate is perfectly developed; generally between 6 and 12 months.
TASTE: Medicinal, but sweet, intense and with great structure. You immediately feel the peat, then spices, vanilla and coffee with a hint of fruit. The finish is incredibly long, with persistent fruit, peat and oak.
AGING: American oak barrels and barrels of ex Sherry Pedro Ximenez.
