An Italian that distills whisky in Australia: it might seem like a play on words, yet Davide Vitale, a great fan of whisky and distillates, trying to set up his own business in Australia, he saw fit to ride his passion and create a distillery: Starward. Compared to other producing countries, Davide has decided to procure all the raw materials a short distance from the distillery, so everything comes from the Melbourne area: even the barrels used for aging are locally sourced, i.e. from the wineries that use them for the refinements of its wines. The climate plays a fundamental role in the aging of the whisky: higher temperatures increase annual evaporation – the so-called angel's share – forcing the producer to make shorter refinements.

This Starward Nova Whisky it is produced only from malted barley and aged for three years in small barrels, sometimes still impregnated with the wine previously contained: these are red wines with an important structure such as Cabernet Franc or Syrah (Shiraz).

TASTE: Full, intense and spicy, with a fruity component of citrus and small berries, then cocoa and prolonged spices.

AGING: Oak barrels former Australian red wine.
