Waterford is a new distillery in the Irish landscape with an innovative concept of approaching the production of whiskey: Waterford wants to pay more attention to raw materials to avoid standardization which has been massive in recent decades, and for this reason it is important to know the source from which the barley which will then be distilled comes from. In this sense, Waterford has mapped 95 barley producers, each with a precise identity card, from which the fundamental raw material comes.
This whiskey Irish is the first whiskey fully certified organic, and the name Gaia is a tribute to mother Earth. Originating from organic crops, the yield of barley is much lower than usual, so production is limited and quite rare. The whiskey it ages for three years and nine months in various types of oak barrels: 42% ex Bourbon oak, 23% French oak, 18% ex sweet wine oak and 17% in American virgin oak.
TASTE: Intense, still fruity breadth of citrus, lemon and cedar, then spices and vanilla, caramel and cinnamon.
AGING: First-fill American oak barrels, American virgin oak barrels, ex Vin Doux Naturel barrels and French oak barrels.
