It seems impossible to talk about innovation when tackling the subject whiskey, a centuries-old history that is facing various challenges, with the increase in demand from enthusiasts from all over the world and above all with the search for biodiversity even in an industry that has tried for decades to standardize production processes. Waterford is a new project that focuses on biodiversity and the experience of a whiskey different, with clear and defined origins and, above all, sustainable. At the base of the distillery is not the production process, but the 95 farms that supply the barley necessary for distillation. The distillery is located in the homonymous town of Waterford about two hours from Dublin.

The distillation is double in the Scottish tradition and not triple as in the Irish school and the distillery is located in former Guinness sheds. This Waterford Sheestown Edition 1.2 was born from the fields of Philip O'Brien, father of one of Waterford's employees. It is a whiskey four years of aging in different types of barrels.

TASTE: Dry and important, thanks also to the alcohol content of 50 degrees, with more notes of cereals and caramel, coffee beans and spices. Ripe fruit.

AGING: First-fill American oak barrels, American virgin oak barrels, ex Vin Doux Naturel barrels and French oak barrels.
